Chow Mein

To make a classic chicken chow mein, begin by boiling 200g of noodles according to package instructions until al dente, then drain and toss with a teaspoon of sesame oil to prevent sticking. While the noodles cook, mix a sauce in a small bowl consisting of 1/2 tbsp soy sauce, 1/2 tbsp oyster sauce, 2 tsp sugar, 1/2 tsp Chinese cooking wine (or mirin), 2 tsp cornflour, and a little white pepper. Thinly slice 200g of chicken breast and stir-fry it in a smoking hot wok with 1 tbsp of oil until cooked, then remove from the pan. In the same wok, add a little more oil and stir-fry shredded cabbage, sliced onions, julienned carrots, and garlic for 1–2 minutes until slightly charred. Return the chicken to the wok along with the noodles and pour over the prepared sauce, tossing continuously over high heat for 1–2 minutes until everything is evenly coated and piping hot. Finally, stir in some fresh bean sprouts and green onions, serving immediately
